1 lb smoked sausage or kielbasa (or chorizo), sliced
2–3 medium potatoes, thinly sliced or diced
6–8 large eggs
2 tbsp butter or oil
½ cup milk or cream
Salt & black pepper, to taste
½ tsp paprika or garlic powder (optional)
Optional: grated cheese (cheddar or mozzarella), onions, herbs
Instructions
Cook the potatoes Heat butter/oil in a cast-iron skillet over medium heat. Add potatoes, season with salt and pepper, and cook 8–10 minutes until tender and lightly golden.
Brown the sausage Add sliced sausage to the skillet. Cook 3–5 minutes, stirring, until nicely browned.
Add the eggs Whisk eggs with milk/cream and optional seasonings. Pour evenly over the sausage and potatoes.
Set & finish Cook on low heat until edges are set. If desired, sprinkle cheese on top. Finish under the broiler 2–4 minutes (or cover and cook on low) until eggs are fully set and the top is golden.
Serve Let rest 2 minutes, slice, and serve hot.
Tips
Extra crispy: brown sausage first, remove, cook potatoes, then combine.
