Russian Tea Cakes / Snowball Cookies ❄️

Instructions

  1. Preheat the oven:
    • Preheat oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  2. Make the dough:
    • In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
    • Mix in vanilla extract.
    • In a separate bowl, whisk together flour and salt, then gradually add to the butter mixture.
    • Stir in chopped nuts until evenly distributed.
  3. Shape the cookies:
    • Roll dough into 1-inch (2.5 cm) balls.
    • Place on prepared baking sheet about 1 inch apart.
  4. Bake:
    • Bake for 12–15 minutes, until the bottoms are lightly golden (cookies may still look pale).
    • Remove from oven and let cool for 5 minutes on the sheet.
  5. Coat in powdered sugar:
    • While still warm, roll the cookies in powdered sugar.
    • Let cool completely, then roll in powdered sugar again for a snowy coating.

💡 Tips:

  • Store in an airtight container at room temperature for up to 1 week.
  • You can toast the nuts lightly for extra flavor.
  • These cookies are delicate and melt-in-your-mouth buttery—perfect with tea or coffee!

If you want, I can also give you a shortcut version that skips rolling and just presses the dough into a pan like bars, then cuts and powders them—super quick and still delicious. Do you want me to share that?
