Hungarian Chicken Paprikás with Dumplings (Csirkepaprikás nokedlivel)

This is one of Hungary’s most loved comfort foods—tender chicken simmered in a rich paprika sauce, served with soft homemade dumplings.


🧾 Ingredients

Chicken Paprikás

  • 1 whole chicken (1.2–1.5 kg), cut into pieces
  • 2 tbsp lard or vegetable oil
  • 2 large onions, finely chopped
  • 2 tbsp sweet Hungarian paprika
  • ½–1 tsp hot paprika (optional)
  • 2 cloves garlic, minced (optional)
  • 1 green Hungarian pepper or bell pepper, sliced
  • 1 tomato, chopped
  • 1½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 250 ml chicken broth or water (1 cup)
  • 200 ml sour cream (¾–1 cup)
  • 1½ tbsp flour

Dumplings (Nokedli)

  • 300 g all-purpose flour (2½ cups)
  • 1 tsp salt
  • 2 eggs
  • 120–150 ml water (½–⅔ cup)

👩‍🍳 Instructions

1️⃣ Make the paprikás base

  1. Heat lard or oil in a wide pot.
  2. Add onions and sauté until soft and lightly golden.
  3. Remove pot from heat and stir in sweet + hot paprika
    👉 This keeps the paprika from burning.

2️⃣ Cook the chicken

  1. Add chicken pieces, salt, pepper, garlic, pepper, and tomato.
  2. Stir well to coat with paprika.
  3. Add broth, cover, and simmer gently 35–45 minutes until tender.

3️⃣ Finish the sauce

  1. Mix sour cream with flour until smooth.
  2. Stir in a ladle of hot sauce (temper it).
  3. Add back to the pot and simmer 5–10 minutes until creamy.
  4. Do not boil hard after adding sour cream.

4️⃣ Make the dumplings

  1. Mix flour and salt.
  2. Add eggs and water gradually to make a sticky, soft dough.
  3. Drop small portions into boiling salted water using a spoon or nokedli maker.
  4. When dumplings float, cook 1 more minute and drain.

🍽️ To Serve

  • Spoon chicken and sauce over dumplings
  • Add extra sour cream if desired
  • Serve with cucumber salad or pickles
