🇭🇺 Rakott Krumpli (Hungarian Layered Potato Casserole)
Rakott Krumpli is pure Hungarian comfort food—simple pantry ingredients, layered with love, and baked until creamy and golden. Every family has their own version, but this is the classic, old-time style.
🥔 Ingredients
- 2½ lbs (1.2 kg) potatoes
- 5 hard-boiled eggs, sliced
- 12 oz (350 g) Hungarian smoked sausage (kolbász), sliced
- 1½–2 cups sour cream
- Salt, to taste
- Black pepper (optional)
- Butter or lard, for greasing
🔥 Instructions
- Cook potatoes
Boil potatoes in their skins until just tender.
Cool slightly, peel, and slice into rounds. - Prepare baking dish
Grease a casserole dish generously with butter or lard. - Layer the casserole
- Potatoes → salt lightly
- Sliced eggs
- Sausage
- Spoon sour cream
Repeat layers, finishing with potatoes + sour cream on top.
- Bake
Bake uncovered at 375°F (190°C) for 35–40 minutes, until bubbling and lightly golden. - Rest
Let stand 10 minutes before serving—it slices better.
🍽️ How It’s Traditionally Served
- With pickles or cucumber salad
- Sometimes a green salad on the side
- Often eaten the next day—even better!
💡 Grandma Tips
- Don’t mash the potatoes—slice them
- Use full-fat sour cream only
- Some families add a splash of milk or cream to the top layer
- For extra richness: dot top with butter
