🇭🇺 Pogácsa – Traditional Hungarian Biscuits
Ingredients
- 500 g (4 cups) all-purpose flour
- 250 g (1 cup) butter or lard (softened)
- 200 ml (¾ cup) sour cream or yogurt
- 25 g fresh yeast (or 7 g dry yeast)
- 1 tsp sugar
- 1 tsp salt
- 1 egg
- 100 g grated cheese (optional but very traditional!)
- Egg yolk for brushing
Instructions
- Activate yeast
Mix yeast with sugar and a little warm sour cream. Let foam 5–10 minutes. - Make dough
Mix flour and salt. Add butter/lard, yeast mixture, egg, and remaining sour cream.
Knead into soft dough. - Rest & fold (traditional texture)
Let rise 45 minutes.
Roll, fold like a letter, rest 15 minutes. Repeat once. - Shape
Roll 2 cm thick. Cut with small round cutter. - Top & bake
Brush with egg yolk. Add cheese if using.
Bake at 190°C / 375°F for 15–18 minutes until golden.
