🇭🇺 Pogácsa – Traditional Hungarian Biscuits

Ingredients

  • 500 g (4 cups) all-purpose flour
  • 250 g (1 cup) butter or lard (softened)
  • 200 ml (¾ cup) sour cream or yogurt
  • 25 g fresh yeast (or 7 g dry yeast)
  • 1 tsp sugar
  • 1 tsp salt
  • 1 egg
  • 100 g grated cheese (optional but very traditional!)
  • Egg yolk for brushing

Instructions

  1. Activate yeast
    Mix yeast with sugar and a little warm sour cream. Let foam 5–10 minutes.
  2. Make dough
    Mix flour and salt. Add butter/lard, yeast mixture, egg, and remaining sour cream.
    Knead into soft dough.
  3. Rest & fold (traditional texture)
    Let rise 45 minutes.
    Roll, fold like a letter, rest 15 minutes. Repeat once.
  4. Shape
    Roll 2 cm thick. Cut with small round cutter.
  5. Top & bake
    Brush with egg yolk. Add cheese if using.
    Bake at 190°C / 375°F for 15–18 minutes until golden.
