  1. Activate the yeast:

  2. Make the dough:
    In a large bowl, mix flour and salt. Cut in cold butter until crumbly. Add sour cream, egg yolks, yeast mixture, and grated cheese. Knead into a soft, slightly sticky dough.
  3. Let it rise:
    Cover and let the dough rest in a warm spot for 1 hour or until doubled.
  4. Roll and fold (optional for flakiness):
    Roll out the dough to about ½ inch thick, fold it in thirds like a letter, then rotate and repeat once or twice. Rest 15 minutes.
  5. Shape the biscuits:
    Roll to ¾ inch thick. Use a round cookie cutter or small glass to cut out rounds. Place on a parchment-lined baking sheet.
  6. Brush and top:
    Brush tops with beaten egg and sprinkle with more grated cheese.
  7. Bake at 375°F (190°C) for 20–25 minutes or until puffed and golden.
