Ingredients
For the cake:
- 1 box yellow cake mix (or vanilla cake mix)
- 4 large eggs
- 1 cup milk
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 can (20 oz / 560 g) crushed pineapple, well drained
- ½ cup shredded coconut (optional)
For the creamy pineapple topping:
- 1 can (14 oz / 400 g) sweetened condensed milk
- 1 cup heavy cream or whipping cream
- ½ cup sour cream or Greek yogurt
- ½ cup crushed pineapple (drained)
- ½ cup shredded coconut
- 1–2 tbsp pineapple juice (from the can)
- 1 tsp vanilla
For the finishing:
- Toasted coconut (optional but AMAZING)
- Extra pineapple chunks for decoration
