🛒 Ingredients
Peach Layer
- 2 cups sliced peaches (fresh or canned, well-drained)
- ¼ cup brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- 1 tbsp cornstarch
- 1 tsp vanilla extract
Pound Cake Batter
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs (room temperature)
- 3 cups all-purpose flour
- ½ tsp salt
- ½ tsp baking powder
- 1 cup sour cream (or whole milk)
- 1 tbsp vanilla extract
Optional Glaze
- 1 cup powdered sugar
- 2–3 tbsp milk or peach juice
- ½ tsp vanilla
👩🍳 Instructions
- Prep the Peaches
In a bowl, toss peaches with brown sugar, cinnamon, nutmeg, cornstarch, and vanilla. Set aside. - Make the Batter
Cream butter and sugar until light and fluffy (3–4 minutes).
Add eggs one at a time, beating well after each.
Mix in vanilla. - Dry Ingredients
In a separate bowl, whisk flour, salt, and baking powder. - Combine
Add dry ingredients to the batter alternately with sour cream, beginning and ending with flour. Mix just until combined. - Assemble
Grease and flour a bundt or loaf pan.
Pour half the batter into the pan, spoon half the peaches over it.
Repeat with remaining batter and peaches. Swirl gently with a knife. - Bake
Bake at 325°F (165°C) for 75–85 minutes, or until a toothpick comes out clean.
Cool 15 minutes, then invert. - Glaze (Optional but AMAZING)
Whisk glaze ingredients and drizzle over cooled cake.
