Pasta with Semolina & Apricot Jam (Hungarian Grízes Tészta)

👩‍🍳 Instructions

1. Cook the Pasta

  1. Boil pasta in salted water until just tender (al dente).
  2. Drain and set aside.

2. Make the Semolina

  1. In a saucepan, heat milk over medium heat.
  2. Gradually whisk in semolina to prevent lumps.
  3. Cook for 3–5 minutes, stirring constantly, until thickened.
  4. Add sugar and a pinch of salt; mix well.

3. Combine Pasta & Semolina

  1. Add cooked pasta to the semolina and stir until well coated.
  2. Let it cool slightly — it should be creamy but not runny.

4. Serve

  1. Spoon pasta onto plates.
  2. Spread a layer of apricot jam on top (or swirl through).
  3. Optional toppings:
    • Small knobs of butter
    • Cinnamon sugar
    • Crushed walnuts or almonds

💡 Tips

  • Adjust the sweetness of the semolina to your liking.
  • For a richer version, cook semolina in part milk and part cream.
  • Can be served warm or cold — tastes amazing either way.
