Oven-Baked Shrimp and Spinach Gratin

Instructions:

  1. Preheat the Oven
Preheat to 375°F (190°C) and lightly grease a baking dish.
  2. Cook the Shrimp
    • Heat olive oil in a skillet over medium heat.
    • Add shrimp, season with a little salt and pepper, and cook for 1–2 minutes per side, just until pink.
    • Remove shrimp and set aside.
  3. Make the Creamy Spinach Sauce
    • In the same pan, melt butter.
    • Add onions and sauté until translucent.
    • Add garlic and cook for 30 seconds until fragrant.
    • Stir in the spinach and cook for 2–3 minutes.
    • Add heavy cream and cream cheese. Stir until smooth and creamy.
    • Season with salt, pepper, and nutmeg.
  4. Assemble the Gratin
    • Spread half the spinach mixture in the baking dish.
    • Layer cooked shrimp on top.
    • Pour the remaining sauce over the shrimp.
    • Sprinkle with Parmesan, mozzarella, and breadcrumbs (if using).
  5. Bake
Bake uncovered for 15–20 minutes, or until bubbly and golden on top.
  6. Serve
Garnish with parsley or chives and serve hot with toasted bread, rice, or pasta.

💡 Tips:

  • Add a splash of white wine to the sauce for extra flavor.
  • For a low-carb version, skip the breadcrumbs.
  • You can also add mushrooms or artichokes for more texture.
