
Old-Fashioned Nut Roll (Classic Walnut Roll) 🌰🍞
Ingredients
Dough
- 4 cups (500 g) all-purpose flour
- ½ cup (100 g) sugar
- 2¼ tsp (7 g) active dry yeast
- 1 cup (240 ml) warm milk
- ½ cup (115 g) butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp salt
Nut Filling
- 2 cups finely ground walnuts (or mixed nuts)
- ¾ cup sugar
- ½ cup warm milk
- 1 tsp cinnamon (optional)
- 1 tsp vanilla extract
Instructions
- Prepare the dough
- Dissolve yeast in warm milk with 1 tsp sugar; rest 5–10 minutes.
- In a bowl, mix flour, sugar, and salt.
- Add eggs, melted butter, vanilla, and yeast mixture.
- Knead until soft and smooth.
- Cover and rise 1–1½ hours, until doubled.
- Make the filling
- Mix ground nuts, sugar, cinnamon, vanilla, and warm milk into a spreadable paste.
- Roll & fill
- Roll dough into a rectangle.
- Spread nut filling evenly, leaving a small border.
- Roll up tightly, seam side down.
- Second rise
- Place on lined baking sheet or loaf pan.
- Cover and rise 30 minutes.
- Bake
- Bake at 180°C / 350°F for 35–40 minutes until golden.
- Finish
- Cool completely.
- Dust with powdered sugar or glaze if desired.
