Oklahoma Nut Candies

Ingredients (Makes ~24 candies)

  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) light corn syrup
  • ½ cup (115 g) unsalted butter
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 2 cups (200 g) mixed nuts (pecans, peanuts, walnuts, or your choice)

Instructions

  1. Prepare pan:
    Line a baking sheet with parchment paper or a silicone mat.
  2. Cook sugar mixture:
    In a medium saucepan over medium heat, combine sugar, corn syrup, butter, and salt. Stir constantly until mixture comes to a boil.
  3. Add nuts:
    Stir in mixed nuts and continue cooking for 2–3 minutes, coating nuts evenly.
  4. Add flavoring:
    Remove from heat and stir in vanilla extract.
  5. Form candies:
    Drop spoonfuls of the mixture onto the prepared baking sheet. Spread slightly with the back of a spoon if needed.
  6. Cool:
    Let cool completely until firm, about 30 minutes.
  7. Serve:
    Break apart if needed and enjoy! Store in an airtight container.
