
Nut Roll Cookies (Walnut Filling)
These tender, buttery nut roll cookies are filled with a sweet walnut mixture and baked until lightly golden. Inspired by traditional Hungarian Diós kifli, they’re perfect for holidays or coffee time.
📝 Ingredients
Dough
- 2 cups (250 g) all-purpose flour
- 1 cup (225 g) unsalted butter, softened
- 1 package (8 oz / 225 g) cream cheese, softened
- 2 tbsp sugar
- Pinch of salt
Walnut Filling
- 1½ cups (150 g) finely ground walnuts
- ½ cup (100 g) sugar
- ¼ cup (60 ml) milk
- 1 tsp vanilla extract
- ½ tsp ground cinnamon (optional)
For Finishing
- 1 egg (for egg wash)
- Powdered sugar for dusting (optional)
👩🍳 Instructions
1️⃣ Make the Dough
- Mix butter and cream cheese until smooth.
- Add sugar, salt, and flour.
- Mix until dough forms.
- Divide into 2 discs, wrap, and chill 1 hour.
2️⃣ Prepare the Filling
- In a saucepan, combine walnuts, sugar, and milk.
- Cook over low heat 2–3 minutes until thick.
- Stir in vanilla and cinnamon.
- Cool completely.
3️⃣ Assemble
- Roll dough into a rectangle (about ⅛-inch thick).
- Spread walnut filling evenly.
- Roll up tightly like a jelly roll.
- Slice into 1-inch pieces.
4️⃣ Bake
- Place on lined baking sheet.
- Brush with beaten egg.
- Bake at 350°F (175°C) for 18–22 minutes until lightly golden.
5️⃣ Finish
- Cool slightly and dust with powdered sugar if desired.
