
Instructions
1. Cook the sausage
- In a skillet over medium heat, cook the sausage until browned.
- Add the onions and sauté until softened.
- Drain the excess fat.
2. Layer in the dish
- Preheat oven to 400°F (200°C).
- Spread the sausage & onion mixture into a greased 9-inch pie dish.
- Sprinkle the Monterey Jack and Swiss cheeses evenly on top.
- Add the green chiles.
3. Make the batter
- In a bowl, whisk together:
- eggs
- milk
- biscuit mix
- salt & pepper
- Pour this mixture over the sausage and cheese in the pie dish.
4. Bake
- Bake for 30–35 minutes, or until golden and set in the center.
- Let cool 5 minutes before slicing.
Tips & Variations
- Add diced jalapeños for a little heat 🌶️
- Swap sausage for chorizo for a southwestern twist
- Use pepper jack cheese for more spice
- Serve with salsa or sour cream
