Instructions

1. Cook the sausage

  • In a skillet over medium heat, cook the sausage until browned.
  • Add the onions and sauté until softened.
  • Drain the excess fat.

2. Layer in the dish

  • Preheat oven to 400°F (200°C).
  • Spread the sausage & onion mixture into a greased 9-inch pie dish.
  • Sprinkle the Monterey Jack and Swiss cheeses evenly on top.
  • Add the green chiles.

3. Make the batter

  • In a bowl, whisk together:
    • eggs
    • milk
    • biscuit mix
    • salt & pepper
  • Pour this mixture over the sausage and cheese in the pie dish.

4. Bake

  • Bake for 30–35 minutes, or until golden and set in the center.
  • Let cool 5 minutes before slicing.
