Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9-inch round or square baking pan and line it with parchment paper.
Make the Crumble Topping: In a small bowl, mix the flour, brown sugar, cinnamon, and salt. Stir in the melted butter until the mixture forms small crumbles. Set aside.
Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Cream the Butter & Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream.
Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the diced apples.
Assemble the Cake: Pour the batter into the prepared baking pan and spread evenly. Sprinkle the crumble topping over the batter.
Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, cover loosely with foil.
Cool & Glaze (Optional): Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. If using the glaze, mix the powdered sugar, milk, and vanilla extract, then drizzle over the cooled cake.
