Mashed Potato Muffins – Don’t LOSE this recipe!

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray.
  2. In a large bowl, mix the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, garlic powder, black pepper, and salt. If the mixture seems too soft, add breadcrumbs for structure.
  3. Scoop the mixture into the muffin tin, filling each cup about ¾ full. Press down slightly to compact.
  4. Bake for 20-25 minutes, or until the muffins are golden brown and crispy on the edges.
  5. Let them cool for a few minutes before carefully removing them from the tin.
  6. Serve warm and enjoy!

Optional Add-ins: Crumbled bacon, diced ham, or sautéed onions for extra flavor!
