1️⃣ Make the Beef Filling
- In a skillet, cook ground beef and diced onion over medium heat until browned.
- Drain excess fat.
- Add garlic and cook 1 more minute.
- Add taco seasoning + water. Simmer until thickened.
- Mix in cream cheese, cheddar, and mozzarella until creamy and totally melted.
- Remove from heat. Let cool slightly.
2️⃣ Assemble the Pockets
- Warm tortillas slightly so they bend easily.
- Add 2–3 tbsp of the cheesy beef filling to the center of each tortilla.
- Fold edges inward like a mini envelope/pocket.
- Press gently to seal.
3️⃣ Cook Until Crispy
Pan-fry method:
- Heat a little oil in a skillet.
- Cook pockets seam-side down first until golden and crispy.
- Flip and crisp the other side.
Air fryer method:
- Brush pockets with oil or butter.
- Air fry at 375°F / 190°C for 6–8 minutes, flipping halfway.
