1️⃣ Prep
- Preheat oven to 350°F / 175°C.
- Grease and line a 9×13-inch pan or two 9-inch round pans.
2️⃣ Make the Cake Batter
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each.
- Stir in vanilla, lemon juice, and lemon zest.
- Gradually mix in dry ingredients, alternating with milk, until smooth.
3️⃣ Bake
- Pour batter into prepared pan(s).
- Bake 35–40 minutes (round pans) or 45–50 minutes (9×13 pan), until a toothpick comes out clean.
- Let cool in pan 10 minutes, then transfer to wire rack.
4️⃣ Optional Lemon Glaze
- Mix powdered sugar with lemon juice until smooth.
- Drizzle over cooled cake for extra zing and sweetness.
5️⃣ Serve
- Slice and enjoy as-is, or with whipped cream or fresh berries.
