Leczo (Polish Vegetable and Sausage Stew)🇭🇺

👨‍🍳 Instructions:

  1. Sauté the aromatics:
In a large pot or deep skillet, heat oil over medium heat. Add chopped onion and sauté until soft and golden, about 5 minutes. Stir in garlic and cook for another 30 seconds.
  2. Add sausage:
Toss in the sliced sausage and cook until browned and fragrant, about 5–7 minutes.
  3. Add vegetables:
Add the bell peppers, tomatoes, and zucchini (if using). Stir in tomato paste and paprika. Mix well.
  4. Simmer:
Reduce heat, cover, and let the stew simmer for 20–25 minutes, stirring occasionally. The vegetables should be soft, and the mixture slightly thickened.
  5. (Optional) Add eggs:
If desired, pour in beaten eggs during the last 2 minutes of cooking. Stir gently until the eggs are set and blended into the stew.
  6. Season and serve:
Taste and adjust seasoning with salt and pepper. Serve hot with fresh crusty bread or rice.

🍲 Serving Suggestions:

  • Serve with fresh bread, boiled potatoes, or buttered noodles.
  • For a vegetarian version, skip the sausage and load up on mushrooms and zucchini.
