
Lecsó (Hungarian Pepper Stew)
Ingredients
- 3 tbsp oil or lard
- 2 large onions, sliced
- 3–4 Hungarian wax peppers (or bell peppers), sliced
- 2 ripe tomatoes, chopped (or 1 cup canned tomatoes)
- 1 tbsp Hungarian sweet paprika
- Salt, to taste
- 100 g smoked sausage (kolbász), sliced (optional)
- 2 eggs (optional)
Instructions
- Heat oil in a pan. Sauté onions until soft and lightly golden.
- Remove from heat, stir in paprika.
- Add peppers, tomatoes, salt, and sausage if using.
- Cover and simmer gently 20–25 minutes until peppers are tender.
- Optional: stir in beaten eggs and cook gently until just set.
Serve with: fresh bread or as a side to meats.
