Lecso Pepper Stew

Lecsó (Hungarian Pepper Stew)

Ingredients

  • 3 tbsp oil or lard
  • 2 large onions, sliced
  • 3–4 Hungarian wax peppers (or bell peppers), sliced
  • 2 ripe tomatoes, chopped (or 1 cup canned tomatoes)
  • 1 tbsp Hungarian sweet paprika
  • Salt, to taste
  • 100 g smoked sausage (kolbász), sliced (optional)
  • 2 eggs (optional)

Instructions

  1. Heat oil in a pan. Sauté onions until soft and lightly golden.
  2. Remove from heat, stir in paprika.
  3. Add peppers, tomatoes, salt, and sausage if using.
  4. Cover and simmer gently 20–25 minutes until peppers are tender.
  5. Optional: stir in beaten eggs and cook gently until just set.

Serve with: fresh bread or as a side to meats.
