Italian Grandma’s Cake

Ingredients (Makes 1 9-inch cake)

  • 3 large eggs
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) vegetable oil
  • 1 cup (240 ml) milk
  • 2 tsp vanilla extract
  • 2½ cups (310 g) all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • Optional: zest of 1 lemon or orange for extra flavor
  • Powdered sugar for dusting

Instructions

  1. Preheat oven: 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Mix wet ingredients:
    In a large bowl, beat eggs and sugar until light and fluffy. Add oil, milk, and vanilla (and optional zest), mixing well.
  3. Combine dry ingredients:
    In a separate bowl, whisk flour, baking powder, and salt. Gradually fold dry ingredients into the wet mixture until smooth.
  4. Bake:
    Pour batter into prepared pan. Bake 35–40 minutes, or until a toothpick inserted comes out clean.
  5. Cool and serve:
    Let cake cool completely. Dust with powdered sugar before serving.
