Hungry for Walnuts – Hungarian Walnut Torte


Instructions:

  1. Prepare the cake batter:
    • Beat egg whites with a pinch of salt until stiff peaks form.
    • In another bowl, whisk egg yolks with sugar until pale and fluffy.
    • Add vanilla, then gently fold in ground walnuts, flour, and baking powder.
    • Carefully fold in the egg whites to keep the batter light.
  2. Bake:
    • Preheat oven to 180°C (350°F).
    • Pour batter into a greased 22 cm (9-inch) cake pan.
    • Bake for 30–35 minutes, until golden and set.
    • Let cool completely, then slice horizontally into 2–3 layers.
  3. Prepare the cream:
    • Beat butter and powdered sugar until smooth and fluffy.
    • Add egg yolks and vanilla, mix well.
    • Stir in ground walnuts until creamy.
  4. Assemble the torte:
    • Spread cream between each cake layer.
    • Cover the top and sides with remaining cream.
  5. Decorate:
    • Garnish with walnuts, chocolate shavings, or a light dusting of powdered sugar.
