Ingredients
Cake Layers (Flourless & Traditional):
- 8 eggs, separated
- 1 cup sugar
- 2 cups finely ground walnuts
- 1 tsp vanilla
- Pinch of salt
Cream Filling (Classic Walnut Cream):
- 1 cup milk
- 1 cup ground walnuts
- 1/2 cup sugar
- 1 tsp vanilla
- 1/2 cup butter, softened
Optional Topping:
- Whipped cream or powdered sugar
- Extra ground walnuts
Instructions
1. Make the cake layers
- Preheat oven to 170°C / 340°F.
- Beat egg yolks + sugar until pale and thick.
- Add vanilla + ground walnuts; mix gently.
- Beat egg whites with a pinch of salt until stiff.
- Fold whites into walnut mixture carefully.
- Pour batter into a lined round cake pan (22–24 cm).
- Bake 35–40 minutes, until set.
- Cool completely, then slice into 2 layers.
2. Make the walnut cream
- Heat milk + sugar until dissolved.
- Stir in ground walnuts + vanilla; cook 1 minute.
- Cool completely.
- Beat butter until fluffy, then mix in walnut mixture.
3. Assemble
- Spread walnut cream between the two cake layers.
- Spread remaining cream on top (optional).
- Chill at least 1 hour to set.
4. Serve
Dust with powdered sugar or top with whipped cream and walnuts.
