Ingredients

Cake Layers (Flourless & Traditional):

  • 8 eggs, separated
  • 1 cup sugar
  • 2 cups finely ground walnuts
  • 1 tsp vanilla
  • Pinch of salt

Cream Filling (Classic Walnut Cream):

  • 1 cup milk
  • 1 cup ground walnuts
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1/2 cup butter, softened

Optional Topping:

  • Whipped cream or powdered sugar
  • Extra ground walnuts

Instructions

1. Make the cake layers

  1. Preheat oven to 170°C / 340°F.
  2. Beat egg yolks + sugar until pale and thick.
  3. Add vanilla + ground walnuts; mix gently.
  4. Beat egg whites with a pinch of salt until stiff.
  5. Fold whites into walnut mixture carefully.
  6. Pour batter into a lined round cake pan (22–24 cm).
  7. Bake 35–40 minutes, until set.
  8. Cool completely, then slice into 2 layers.

2. Make the walnut cream

  1. Heat milk + sugar until dissolved.
  2. Stir in ground walnuts + vanilla; cook 1 minute.
  3. Cool completely.
  4. Beat butter until fluffy, then mix in walnut mixture.

3. Assemble

  1. Spread walnut cream between the two cake layers.
  2. Spread remaining cream on top (optional).
  3. Chill at least 1 hour to set.

4. Serve

Dust with powdered sugar or top with whipped cream and walnuts.
