Hungarian Walnut Roll (Bejgli)

Ingredients

Dough

  • 500 g flour
  • 200 g butter
  • 50 g powdered sugar
  • 2 egg yolks
  • 200 ml milk
  • 20 g fresh yeast (or 7 g dry yeast)
  • pinch of salt

Filling

  • 300 g ground walnuts
  • 150 g sugar
  • 150 ml milk
  • 1 tsp vanilla sugar
  • lemon zest (optional)

Top

  • melted chocolate or white chocolate (optional)

Instructions

  1. Dissolve yeast in warm milk with a little sugar.
  2. Mix flour, butter, sugar, egg yolks, salt and yeast mixture.
  3. Knead into a smooth dough and let rest 30–40 minutes.
  4. For the filling, heat milk with sugar, add ground walnuts and vanilla, mix until thick.
  5. Roll the dough into rectangles and spread the filling evenly.
  6. Roll tightly into logs.
  7. Bake at 180°C for about 30–35 minutes until golden.
  8. Let cool and decorate with melted chocolate if desired.
