1. Prepare the Dough

  1. Mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt.
  3. Add yeast mixture, egg, butter, and vanilla.
  4. Knead until smooth and elastic (8–10 minutes).
  5. Cover and let rise 1 hour, until doubled.

2. Make the Fillings

Walnut Filling:

  1. Heat milk and sugar.
  2. Stir in ground walnuts, vanilla, and lemon zest.
  3. Cook until thick, then cool.

Poppy Seed Filling:

  1. Heat milk and sugar.
  2. Add poppy seeds, vanilla, and lemon zest.
  3. Cook until thick, then cool.

3. Shape the Rolls

  1. Divide dough into 2 parts.
  2. Roll each into a rectangle (about 30×25 cm).
  3. Spread walnut filling on one, poppy seed filling on the other.
  4. Roll tightly into logs.
  5. Place seam-side down on a lined baking tray.

4. Final Proof

  • Cover and let rise 30 minutes.

5. Bake

  1. Brush with egg yolk and milk.
  2. Bake at 180°C (350°F) for 30–35 minutes until golden.
