1. Prepare the Dough
- Mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
- In a large bowl, combine flour and salt.
- Add yeast mixture, egg, butter, and vanilla.
- Knead until smooth and elastic (8–10 minutes).
- Cover and let rise 1 hour, until doubled.
2. Make the Fillings
Walnut Filling:
- Heat milk and sugar.
- Stir in ground walnuts, vanilla, and lemon zest.
- Cook until thick, then cool.
Poppy Seed Filling:
- Heat milk and sugar.
- Add poppy seeds, vanilla, and lemon zest.
- Cook until thick, then cool.
3. Shape the Rolls
- Divide dough into 2 parts.
- Roll each into a rectangle (about 30×25 cm).
- Spread walnut filling on one, poppy seed filling on the other.
- Roll tightly into logs.
- Place seam-side down on a lined baking tray.
4. Final Proof
- Cover and let rise 30 minutes.
5. Bake
- Brush with egg yolk and milk.
- Bake at 180°C (350°F) for 30–35 minutes until golden.
