- Make the Crust:
- In a bowl, whisk flour, powdered sugar, and salt.
- Rub in the cold butter with your fingertips until mixture resembles coarse crumbs.
- Stir in egg yolk and just enough cold water until dough comes together.
- Form into a disk, wrap in plastic, and chill 30 minutes.
- Prepare Filling:
- Toss apple slices with sugar, cornstarch, cinnamon, and lemon zest. Set aside.
- Roll & Assemble:
- Preheat oven to 350 °F (175 °C).
- Roll chilled dough on a lightly floured surface to fit a 9-inch tart pan with removable bottom.
- Press dough into pan, trim edges, and dock base with a fork.
- Arrange apple mixture evenly in crust.
- Make Streusel:
- Combine flour and sugar. Rub in cold butter until pea-sized crumbs form.
- Sprinkle streusel over apples.
- Bake:
- Bake 40–45 minutes until crust and streusel are golden and apples are tender.
- Let cool slightly before removing from pan.
- Serve:
- Slice and serve warm or at room temperature.
- Optional: dust with powdered sugar or serve with a dollop of whipped cream or vanilla ice cream.
