🇭🇺 Hungarian Style Bean Soup (Magyaros Bableves)

Ingredients:

  • 2 cups (400 g) dried beans (pinto, kidney, or cranberry beans) – soaked overnight
  • 1 medium onion, finely chopped
  • 2 tbsp lard or oil
  • 2 carrots, diced
  • 1 parsley root (or parsnip), diced
  • 2 medium potatoes, cubed
  • 1 green pepper, chopped
  • 2 tomatoes, chopped (or 1 tbsp tomato paste)
  • 2 cloves garlic, minced
  • 1–2 bay leaves
  • 1 tbsp sweet Hungarian paprika
  • 1 tsp caraway seeds (optional)
  • 6 cups (1.5 L) water or broth
  • 150 g (5 oz) smoked sausage (kolbász), sliced
  • 150 g (5 oz) smoked ham hock or bacon (optional, for depth)
  • Salt & black pepper to taste

For thickening (optional):

  • 2 tbsp flour
  • 2 tbsp oil or lard (for roux)
  • Or a few tbsp sour cream mixed with 1 tbsp flour (for creamy version)
