
🇭🇺 Hungarian String Bean Dill Soup

Ingredients
- 1 lb (450 g) yellow or green string beans, trimmed and cut
- 2 tbsp oil or butter
- 1 small onion, finely chopped
- 2 tbsp all-purpose flour
- 1 tbsp sweet Hungarian paprika
- 6 cups water or light vegetable/chicken broth
- Salt, to taste
To Finish
- ¾ cup sour cream
- 1–2 tbsp fresh dill, finely chopped
- 1 tsp vinegar or lemon juice (to taste)
Instructions
- In a pot, heat oil or butter. Add onion and sauté until soft.
- Stir in flour to make a light roux. Remove from heat and add paprika.
- Gradually add water or broth, whisking smooth.
- Add string beans and salt. Bring to a boil, then simmer 25–30 minutes until tender.
- In a bowl, mix sour cream with a ladle of hot soup.
- Stir sour cream mixture back into the pot.
- Add dill and vinegar or lemon juice.
- Heat gently without boiling. Serve hot.
