Hungarian Sour Cherry Cake (Meggyes Kevert Sütemény)

Ingredients

  • 4 eggs
  • 200 g sugar
  • 120 ml oil
  • 120 ml milk
  • 250 g all-purpose flour
  • 10 g baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 300 g sour cherries (pitted, fresh or canned, drained)

Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Whisk eggs and sugar until light and fluffy.
  3. Add oil, milk, vanilla, and salt; mix well.
  4. Fold in flour mixed with baking powder.
  5. Gently fold in the sour cherries.
  6. Pour batter into a greased baking pan.
  7. Bake for 35–40 minutes until golden and set.
  8. Let cool slightly before slicing.
