Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 cup (120 g) finely ground walnuts
  • 1 cup (225 g) unsalted butter, cold, cubed
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract (or vanilla sugar)
  • Pinch of salt

For Coating

  • ¾ cup powdered sugar
  • 1 tsp vanilla sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, ground walnuts, powdered sugar, and salt.
  3. Cut in cold butter and vanilla until a soft, crumbly dough forms (do not overwork).
  4. Take small pieces of dough and shape into crescent (half-moon) shapes.
  5. Place on baking sheet, leaving space between cookies.
  6. Bake 12–15 minutes until just set — cookies should stay pale.
  7. While still warm, gently roll cookies in powdered sugar (or vanilla sugar).
  8. Cool completely; dust again with sugar if desired.
