Hókifli – Old-Fashioned Recipe
Ingredients
- 2 cups (250 g) all-purpose flour
- 1 cup (120 g) finely ground walnuts
- 1 cup (225 g) unsalted butter, cold, cubed
- ¼ cup powdered sugar
- 1 tsp vanilla extract (or vanilla sugar)
- Pinch of salt
For Coating
- ¾ cup powdered sugar
- 1 tsp vanilla sugar (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, ground walnuts, powdered sugar, and salt.
- Cut in cold butter and vanilla until a soft, crumbly dough forms (do not overwork).
- Take small pieces of dough and shape into crescent (half-moon) shapes.
- Place on baking sheet, leaving space between cookies.
- Bake 12–15 minutes until just set — cookies should stay pale.
- While still warm, gently roll cookies in powdered sugar (or vanilla sugar).
- Cool completely; dust again with sugar if desired.
