Instructions:
- Base flavor:
- Heat lard/oil in a large pot. Add onions and cook until golden.
- Stir in garlic and paprika (remove from heat briefly to avoid burning paprika).
- Build the stew:
- Add sausage slices, bell pepper, and tomato. Stir for 2–3 minutes.
- Add potatoes, broth, bay leaf, caraway, salt & pepper.
- Simmer:
- Bring to a boil, then reduce to low. Simmer about 30–40 minutes, until potatoes are tender and flavors meld.
- Finish & serve:
- Taste and adjust seasoning.
- Garnish with parsley.
🍽 Serving:
- Traditionally served with fresh bread or pickles.
- You can also add a dollop of sour cream on top for creaminess.
👉 This stew is simple, rustic, and filling — exactly the kind of dish Hungarian grandmothers would cook for a family dinner.
Would you like me to also give you the oven-baked version (krumpli rakottas with sausage), which is like a layered casserole?
