(Kolbászos Krumpli)

Ingredients:

  • 2 tbsp lard or vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp sweet Hungarian paprika
  • 1 lb (450 g) smoked Hungarian sausage (or kielbasa), sliced into rounds
  • 2 lbs (900 g) potatoes, peeled & cut into chunks
  • 1 bell pepper, chopped (optional but adds flavor)
  • 1 medium tomato, chopped (or 1 tbsp tomato paste)
  • 4 cups chicken or vegetable broth (or water with a bouillon cube)
  • 1 bay leaf
  • ½ tsp caraway seeds (optional)
  • Salt & pepper, to taste
  • Fresh parsley, for garnish
