🇭🇺 Hungarian Potato Paprika – Paprikás Krumpli
Ingredients
- 2 lbs (900 g) potatoes, peeled and cut into chunks
- 1 medium onion, chopped
- 2 tablespoons oil or lard
- 2 tablespoons Hungarian sweet paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon caraway seeds (optional)
- 1 Hungarian sausage (kolbász), sliced (optional)
- 1 tomato, chopped (optional)
- 1 green pepper, chopped (optional)
- 2–3 cups water or broth
Directions
- Heat oil in a large pot. Sauté chopped onion until soft and lightly golden.
- Remove from heat and stir in paprika (to prevent burning).
- Add potatoes, salt, pepper, caraway seeds, sausage (if using), tomato, and green pepper. Stir well.
- Pour in enough water or broth to just cover the potatoes.
- Bring to a boil, then reduce heat and simmer 25–30 minutes until potatoes are tender and sauce thickens slightly.
- Adjust seasoning and serve hot.
