🥣 Instructions
1️⃣ Sauté Onions and Garlic
- Heat oil in a large pot over medium heat.
- Add chopped onion and cook until translucent.
- Add garlic and cook 1 minute until fragrant.
2️⃣ Add Paprika and Sausage
- Remove from heat briefly and stir in paprika (prevents burning).
- Add sausage slices if using and mix well.
3️⃣ Cook the Potatoes
- Add cubed potatoes and stir to coat with paprika and oil.
- Pour in water or broth until potatoes are just covered.
- Season with salt and pepper.
4️⃣ Simmer
- Bring to a boil, then reduce heat. Cover and simmer 20–25 minutes, until potatoes are tender and sauce has thickened.
5️⃣ Serve
- Spoon into bowls and top with a dollop of sour cream.
- Garnish with chopped parsley if desired.
- Serve with crusty bread or as a side to meat dishes.
💡 Tips
- Use starchy potatoes for a thicker, creamier sauce.
- Sweet Hungarian paprika is key for authentic flavor.
- For a richer version, stir in 1–2 tbsp butter before serving.
- Leftovers taste even better the next day as flavors meld together.
