Hungarian Poppy Seed Bread Pudding (Mákos Guba) – Recipe

Ingredients:

  • 8–10 slices of stale white bread or brioche, cut into cubes
  • 100 g (1/2 cup) poppy seeds, ground
  • 100–150 g (1/2–3/4 cup) sugar, divided
  • 500 ml (2 cups) milk
  • 2 eggs
  • 50 g (1/4 cup) butter, melted
  • Optional: 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions:

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. Arrange bread cubes in the dish.
  3. In a small bowl, mix ground poppy seeds with half the sugar. Sprinkle evenly over bread.
  4. In a saucepan, heat milk with remaining sugar and butter until warm. Remove from heat; add vanilla and beaten eggs, mixing quickly.
  5. Pour milk mixture over the bread and poppy seeds, pressing lightly to soak evenly.
  6. Let sit 10 minutes to absorb.
  7. Bake 25–30 minutes until set and golden on top.
  8. Cool slightly, dust with powdered sugar, and serve warm.
