1. Make the dough:
- Peel and mash your boiled potatoes while still warm. Let them cool a bit.
- Add egg, flour, and salt. Mix into a soft dough. If it’s too sticky, add more flour — it should be smooth and pliable.
2. Prepare the filling:
- Wash plums and remove the pits. If they’re large, halve them.
- Place a sugar cube or a bit of cinnamon-sugar mix inside each plum.
3. Shape the dumplings:
- Roll the dough out about ½ inch thick on a floured surface.
- Cut into squares big enough to wrap a plum.
- Place a plum in each square, pinch the dough around it, and roll into a smooth ball.
4. Cook the dumplings:
- Bring a large pot of salted water to a boil.
- Drop in the dumplings and cook gently until they float to the top (about 8–10 minutes).
- Use a slotted spoon to remove and drain them.
5. Toast the coating:
- In a large skillet, melt butter and add breadcrumbs. Toast over medium heat until golden brown and fragrant.
- Roll cooked dumplings in the breadcrumbs until fully coated.
6. Serve:
Sprinkle with powdered sugar and a touch of cinnamon. Serve warm — even better with a spoonful of sour cream or vanilla sauce!
