For the Dough:

  • 2 ½ cups (300g) all-purpose flour
  • ½ cup (100g) sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 cup (200g) cold butter, cubed
  • 1 egg
  • 2–3 tablespoons sour cream

For the Filling:

  • 1 ½ lbs (700g) fresh plums, halved and pitted
  • ¼ cup (50g) sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon breadcrumbs (optional, absorbs juice)

For Topping:

  • Powdered sugar

👩‍🍳 Instructions

  1. Prepare the Dough
    In a bowl, mix flour, sugar, baking powder, and salt.
    Add cold butter and rub it in until crumbly.
    Mix in egg and sour cream. Knead gently until smooth.
    Wrap and refrigerate for 30 minutes.
  2. Prepare the Plums
    Wash, halve, and remove pits.
    Toss with sugar and cinnamon.
  3. Assemble
    Preheat oven to 350°F (180°C).
    Roll out ⅔ of the dough and press into a greased 9×13-inch pan.
    Sprinkle breadcrumbs if using.
    Arrange plums cut-side up.
  4. Top Layer
    Roll out remaining dough and place over plums (or create a lattice).
  5. Bake
    Bake for 35–40 minutes until golden brown.
  6. Finish
    Cool completely and dust with powdered sugar before slicing.

💡 Tip:
Hungarian plums are slightly tart — if yours are very sweet, reduce the sugar a bit.
