Hungarian Pancakes (Palacsinta)

These are Hungarian Pancakes (Palacsinta).

Ingredients

  • 2 eggs
  • 250 g flour
  • 500 ml milk
  • 100 ml sparkling water (or water)
  • 1 tbsp sugar
  • 1 tbsp oil
  • pinch of salt

Filling (optional)

  • jam
  • cocoa powder + sugar
  • sweet cottage cheese
  • Nutella

Instructions

  1. In a bowl mix eggs, sugar, salt, and milk.
  2. Add flour slowly and mix until smooth.
  3. Stir in sparkling water and oil to make a thin batter.
  4. Heat a lightly oiled pan.
  5. Pour a small amount of batter and swirl to make a thin pancake.
  6. Cook about 1 minute per side.
  7. Spread filling (jam, cocoa sugar, etc.).
  8. Roll or fold the pancakes.

Serve warm, often topped with powdered sugar or sour cream.
