Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1¼ cups milk
  • Pinch of salt
  • 1 tbsp sugar (optional, for sweet pancakes)
  • 1 tbsp oil or melted butter

For Cooking

Fillings (traditional options)

  • Apricot jam
  • Sweetened cottage cheese
  • Nut filling (ground walnuts + sugar)
  • Cocoa sugar or Nutella

Instructions

  1. In a bowl, whisk flour, eggs, milk, salt, sugar (if using), and oil until very smooth and thin (crêpe-like batter).
  2. Heat a lightly greased non-stick pan over medium heat.
  3. Pour a small ladle of batter, swirl pan to coat thinly.
  4. Cook 1–2 minutes until edges lift, flip, and cook 30–60 seconds more.
  5. Remove and repeat with remaining batter.
  6. Fill, roll, or fold and serve warm.

Tips

  • Batter should be thin and pourable
  • Let batter rest 10 minutes for best texture
  • Dust with powdered sugar if serving sweet
