Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1¼ cups milk
- Pinch of salt
- 1 tbsp sugar (optional, for sweet pancakes)
- 1 tbsp oil or melted butter
For Cooking
- Butter or oil
Fillings (traditional options)
- Apricot jam
- Sweetened cottage cheese
- Nut filling (ground walnuts + sugar)
- Cocoa sugar or Nutella
Instructions
- In a bowl, whisk flour, eggs, milk, salt, sugar (if using), and oil until very smooth and thin (crêpe-like batter).
- Heat a lightly greased non-stick pan over medium heat.
- Pour a small ladle of batter, swirl pan to coat thinly.
- Cook 1–2 minutes until edges lift, flip, and cook 30–60 seconds more.
- Remove and repeat with remaining batter.
- Fill, roll, or fold and serve warm.
Tips
- Batter should be thin and pourable
- Let batter rest 10 minutes for best texture
- Dust with powdered sugar if serving sweet
