Ingredients:
- 12 oz (340g) wide egg noodles or square-shaped fleky pasta
- 1 tbsp butter or oil
- 1 medium onion, finely chopped
- 8 oz (225g) smoked ham, diced
- 1/2 cup sour cream (optional, for extra creaminess)
- 4 large eggs
- 1 cup whole milk
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp sweet Hungarian paprika (optional, for authentic Hungarian flavor)
- 1/4 tsp nutmeg (optional, for depth of flavor)
- 1 cup shredded cheese (Gruyère, Emmental, or a mild cheddar)
- 1 tbsp breadcrumbs (for topping, optional)
Instructions:
Step 1: Prepare the Noodles
- Bring a large pot of salted water to a boil.
- Cook the egg noodles or fleky pasta according to package instructions until al dente.
- Drain and toss with a little butter or oil to prevent sticking. Set aside.
Step 2: Prepare the Ham Mixture
- In a large skillet, melt 1 tablespoon of butter or heat oil over medium heat.
- Add the chopped onion and sauté until softened and slightly golden, about 5 minutes.
- Stir in the diced smoked ham and cook for another 2-3 minutes to develop flavor.
- If using, add the sweet Hungarian paprika and mix well.
- Remove from heat and set aside.
Step 3: Prepare the Custard Base
- In a mixing bowl, whisk together the eggs, milk, sour cream (if using), salt, pepper, and nutmeg.
- Stir in half of the shredded cheese, reserving the other half for topping.
Step 4: Assemble the Casserole
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish (9×13-inch or similar size).
- In a large bowl, combine the cooked noodles with the ham mixture.
- Pour the egg and milk mixture over the noodles and gently toss to coat evenly.
