
Hungarian Nokedli (Spaetzle)
Ingredients:
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- ½–¾ cup (120–180 ml) water
- 1 tsp salt
Instructions:
- Bring a large pot of salted water to a boil.
- In a bowl, mix flour and salt. Add eggs and ½ cup water.
Stir until a thick, sticky batter forms.
Add a little more water if needed — dough should be soft but not runny. - Using a spaetzle maker, colander, or spoon, push the dough through into boiling water.
- Cook 2–3 minutes. When dumplings float to the top, they are done.
- Remove with a slotted spoon and toss with a little butter or oil.
Serving Ideas:
- Classic side for Chicken Paprikash
- Tossed with butter and fresh parsley
- Mixed with cheese for a quick comfort dish
