Hungarian Nokedli (Spaetzle)

Ingredients:

  • 2 cups (250 g) all-purpose flour
  • 2 large eggs
  • ½–¾ cup (120–180 ml) water
  • 1 tsp salt

Instructions:

  1. Bring a large pot of salted water to a boil.
  2. In a bowl, mix flour and salt. Add eggs and ½ cup water.
    Stir until a thick, sticky batter forms.
    Add a little more water if needed — dough should be soft but not runny.
  3. Using a spaetzle maker, colander, or spoon, push the dough through into boiling water.
  4. Cook 2–3 minutes. When dumplings float to the top, they are done.
  5. Remove with a slotted spoon and toss with a little butter or oil.

Serving Ideas:

  • Classic side for Chicken Paprikash
  • Tossed with butter and fresh parsley
  • Mixed with cheese for a quick comfort dish
