Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • ¾–1 cup water
  • ½ tsp salt

Instructions

  1. Bring a large pot of well-salted water to a boil.
  2. In a bowl, mix flour and salt. Add eggs and water gradually to form a thick, sticky batter.
  3. Let batter rest 10 minutes (important for tender dumplings).
  4. Using a spoon, spatula, or nokedli grater, drop small pieces of dough into boiling water.
  5. When dumplings float, cook 1–2 more minutes.
  6. Remove with a slotted spoon and toss lightly with butter if desired.

Tips

  • Batter should be sticky, not pourable
  • Work in batches so water keeps boiling
