- Prepare the Meat Mixture
- In a large bowl, combine breadcrumbs with milk and let sit for 2–3 minutes to soak.
- Add ground meat, onion, garlic, egg, paprika, caraway, parsley, salt, and pepper.
- Mix gently with your hands until well combined (don’t overmix or it will be dense).
- Shape the Loaf
- Transfer mixture to a greased loaf pan or shape into a free-form loaf on a baking tray.
- Brush top with a little oil or melted lard to keep moist.
- Bake
- Preheat oven to 350°F (175°C).
- Bake for about 50–60 minutes, until golden brown and cooked through (internal temp about 160°F / 70°C).
- Rest & Slice
- Let sit 10 minutes before slicing so it holds together nicely.
🍽️ Serving
- Serve with mashed potatoes, pickles, and a cucumber salad (tejfölös uborkasaláta) — a very Hungarian combination.
- Leftovers are great sliced cold in sandwiches with mustard!
