Hungarian Layered Potatoes

Ingredients

  • 2 lbs (1 kg) potatoes
  • 4–5 hard-boiled eggs, sliced
  • 12 oz (340 g) Hungarian smoked sausage, sliced
  • 1½ cups sour cream
  • 2 tablespoons butter or oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon sweet Hungarian paprika

Directions

  1. Boil potatoes in their skins until just tender. Cool, peel, and slice.
  2. Preheat oven to 350°F (175°C). Grease a baking dish.
  3. Layer half the potatoes in the dish. Season lightly with salt, pepper, and paprika.
  4. Add half the sliced eggs and sausage.
  5. Spread a layer of sour cream on top.
  6. Repeat layers, finishing with sour cream on top.
  7. Dot with butter and sprinkle lightly with paprika.
  8. Bake 30–40 minutes until heated through and slightly golden on top.
