🥄 Instructions

Step 1: Bake the Puff Pastry

  1. Preheat the oven to 400°F (200°C).
  2. Roll out your puff pastry sheets to fit a 9×13-inch baking pan (or similar).
  3. Place each sheet on a baking sheet lined with parchment paper. Prick all over with a fork (to prevent too much puffing).
  4. Bake each sheet until golden brown and crisp — about 10–12 minutes. Let cool completely.

Step 2: Make the Cream

  1. In a large bowl, whisk together the egg yolks, flour, cornstarch, and half of the sugar until smooth and pale.
  2. In a saucepan, heat the milk with the vanilla until steaming but not boiling.
  3. Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan. Cook over medium heat, stirring constantly, until thickened into a smooth custard (about 5–7 minutes).
  5. Remove from heat and let cool slightly.
  6. In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff, glossy peaks form.
  7. Gently fold the whipped egg whites into the slightly cooled custard, creating a very light, mousse-like cream.

Step 3: Assemble the Krémes

  1. Place one baked puff pastry sheet in the bottom of your baking pan.
  2. Pour the custard cream over the pastry and spread evenly.
  3. Carefully place the second puff pastry sheet on top.

Step 4: Chill and Finish

  • Refrigerate the Krémes for at least 4 hours (preferably overnight) so it firms up beautifully.
  • Before serving, dust generously with powdered sugar.
  • Slice carefully with a sharp knife dipped in hot water for clean, gorgeous squares!

  • Some classic Hungarian bakeries use a slightly thinner custard and top the Krémes with a light whipped cream too!
  • You can also make a “Házi Krémes” version (home-style) with a bit richer, heavier custard for an even more nostalgic flavor.
