
🥄 Instructions
Step 1: Bake the Puff Pastry
- Preheat the oven to 400°F (200°C).
- Roll out your puff pastry sheets to fit a 9×13-inch baking pan (or similar).
- Place each sheet on a baking sheet lined with parchment paper. Prick all over with a fork (to prevent too much puffing).
- Bake each sheet until golden brown and crisp — about 10–12 minutes. Let cool completely.
Step 2: Make the Cream
- In a large bowl, whisk together the egg yolks, flour, cornstarch, and half of the sugar until smooth and pale.
- In a saucepan, heat the milk with the vanilla until steaming but not boiling.
- Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan. Cook over medium heat, stirring constantly, until thickened into a smooth custard (about 5–7 minutes).
- Remove from heat and let cool slightly.
- In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff, glossy peaks form.
- Gently fold the whipped egg whites into the slightly cooled custard, creating a very light, mousse-like cream.
Step 3: Assemble the Krémes
- Place one baked puff pastry sheet in the bottom of your baking pan.
- Pour the custard cream over the pastry and spread evenly.
- Carefully place the second puff pastry sheet on top.
Step 4: Chill and Finish
- Refrigerate the Krémes for at least 4 hours (preferably overnight) so it firms up beautifully.
- Before serving, dust generously with powdered sugar.
- Slice carefully with a sharp knife dipped in hot water for clean, gorgeous squares!

- Some classic Hungarian bakeries use a slightly thinner custard and top the Krémes with a light whipped cream too!
- You can also make a “Házi Krémes” version (home-style) with a bit richer, heavier custard for an even more nostalgic flavor.
