1️⃣ Make the Dough
- In a bowl, combine flour and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add sour cream (and egg yolk if using) and mix until dough comes together.
- Wrap in plastic and chill 30 minutes.
2️⃣ Prepare the Filling
- If using jam, stir until smooth.
- If using nuts, mix ground walnuts, sugar, and milk to form a thick paste.
3️⃣ Shape the Kifli
- Divide dough into 2–3 portions. Roll each into a circle, about ¼ inch thick.
- Cut into triangles (like pizza slices).
- Place a small spoonful of filling near the wide end.
- Roll up from wide end to point to form a crescent.
4️⃣ Bake
- Preheat oven to 350°F / 175°C.
- Place on a parchment-lined baking sheet.
- Bake 15–20 minutes until lightly golden.
5️⃣ Finish
- Let cool slightly, then dust with powdered sugar.
- Serve with tea or coffee.

- Chill dough well — it makes rolling and shaping easier.
