• Add the carrots, parsnip, potatoes, bell pepper, and tomato to the pot.
• Pour in the beef broth or water, ensuring all ingredients are covered. Bring to a boil, then reduce heat to low.
5. Simmer:
• Cover and let the stew simmer for 1.5 to 2 hours, or until the meat is tender, and the flavors have melded together. Stir occasionally and add more liquid if needed.
6. Serve:
