
A light, flavorful, and comforting soup made with tender green beans, potatoes, and a touch of paprika.
Ingredients
- 500 g green beans, trimmed and cut into 2-inch pieces
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp oil or butter
- 1 tsp sweet Hungarian paprika
- 4 cups vegetable or chicken broth
- Salt & black pepper, to taste
- Optional: sour cream for serving
- Fresh parsley, chopped
Instructions
- Sauté Aromatics
Heat oil in a pot. Add onion and garlic, sauté until soft. Stir in paprika briefly. - Add Vegetables
Add potatoes, green beans, and broth. Bring to a boil. - Simmer
Reduce heat and simmer 15–20 minutes, until vegetables are tender. - Season & Serve
Add salt and pepper to taste. Garnish with parsley and a dollop of sour cream if desired. Serve hot.
💡 Tip: For a richer flavor, add a smoked sausage slice or ham hock while simmering.
