Hungarian Green Bean Soup (Zöldbab Leves) 🇭🇺🥣

A light, flavorful, and comforting soup made with tender green beans, potatoes, and a touch of paprika.


Ingredients

  • 500 g green beans, trimmed and cut into 2-inch pieces
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp oil or butter
  • 1 tsp sweet Hungarian paprika
  • 4 cups vegetable or chicken broth
  • Salt & black pepper, to taste
  • Optional: sour cream for serving
  • Fresh parsley, chopped

Instructions

  1. Sauté Aromatics
    Heat oil in a pot. Add onion and garlic, sauté until soft. Stir in paprika briefly.
  2. Add Vegetables
    Add potatoes, green beans, and broth. Bring to a boil.
  3. Simmer
    Reduce heat and simmer 15–20 minutes, until vegetables are tender.
  4. Season & Serve
    Add salt and pepper to taste. Garnish with parsley and a dollop of sour cream if desired. Serve hot.

💡 Tip: For a richer flavor, add a smoked sausage slice or ham hock while simmering.
