Hungarian Goulash Soup Made at Home

Ingredients

  • 700–800 g beef (chuck or shin), cubed
  • 2 large onions, finely chopped
  • 2 tbsp lard or oil
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp caraway seeds
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • Salt & black pepper to taste
  • 1.5 liters water or beef broth
  • Optional: pinch of hot paprika

Instructions

  1. Build the base
    Heat fat in a large pot. Add onions and cook slowly until soft and golden.
  2. Paprika moment (very important!)
    Remove pot from heat. Stir in paprika quickly so it doesn’t burn.
  3. Add beef & spices
    Return to heat, add beef, garlic, caraway, salt and pepper. Stir well.
  4. Vegetables in
    Add tomato and pepper. Pour in water/broth.
  5. Slow simmer
    Cover and cook gently for about 90 minutes until beef is tender.
  6. Finish with potatoes & carrots
    Add them and cook another 20–25 minutes until soft.
