🍲 Hungarian Goulash Soup (Gulyásleves)
Ingredients (serves 6–8)
- 2 tbsp lard or vegetable oil
- 2 medium onions, finely chopped
- 2 tbsp Hungarian sweet paprika (a must!)
- 2 cloves garlic, minced
- 2 lbs (900 g) beef shank, chuck, or stewing beef, cut into 1-inch cubes
- 2 medium carrots, sliced
- 2 medium parsnips, sliced
- 1 medium tomato, peeled & chopped (or 1/2 cup canned)
- 1 green pepper (Hungarian wax pepper if possible, or bell pepper), chopped
- 6 cups (1.5 liters) beef broth or water
- 3 medium potatoes, diced
- 1 tsp caraway seeds (lightly crushed)
- Salt & pepper to taste
Optional (for csipetke dumplings):
- 1/2 cup flour
- 1 egg
- Pinch of salt
